EASIEST SUMMER SALAD: TUSCAN KALE, GRILLED CHICKEN, AND FARMER'S MARKET TOMATO SALAD

I just moved to a different neighborhood in Baltimore and I can't say how happy I am! We're above the sweetest coffee shop/bakery/bistro! It's been my dream to live above a place like this! And there's a beautiful park nearby (with the original Washington Monument!) that has little tables with umbrellas next to a fountain where I can work on the med school applications that have been keeping me from the kitchen this last month! But the good news is that I'm almost done with those so I'll be back to cooking up a storm soon enough!

This is quite possibly one of the easiest and healthiest salads you could make! It has only three ingredients and (surprise!) it doesn't even have an actual dressing so it truly is an extremely healthy salad. Plus, it is perfect for summer with all of the farmer's markets going on! That's how I ended up making it actually. My new place is within walking distance of the largest farmer's market in Baltimore, so I decided to walk down there the day after I moved and see what I could find. I ended up with more fruit and vegetables than I could possibly eat in a week haha but it was great and I'm going to make it a point to go each week!

Anyways... I had some leftover grilled chicken that I had moved with me and some new Tuscan kale and fresh tomatoes from the farmer's market, so I decided to make a salad. I didn't have any olive oil yet though so I decided to see what would happen if I poured the juices from cutting the tomatoes over the kale. And it was amazing!! So summery and fresh and rich and sweet and really just surprisingly impressive. But, this is the catch of the recipe: it depends on the quality of your tomatoes! So you're going to have to actually get them from the farmer's market or grow them yourself because I don't think this recipe would be any good with tomatoes from the grocery store. But it's worth it because then you get to enjoy the experience of the farmer's market or gardening yourself too!


tuscan kale, grilled chicken, and farmer's market tomato salad

1 bunch Tuscan kale
1 grilled chicken breast
1 high quality tomato from the farmer's market or your garden!

Trim the stems off of the kale and slice into ~1" ribbons. Slice the chicken breast into bite sized pieces. Slice the tomato and reserve the juices. Assemble chicken over the kale and the tomatoes over the chicken, pouring the fresh juices over the salad to finish. That's it! Mix to serve and enjoy!
